
We are heading into a really busy stretch of May. Between end-of-school activities, sports, and everything else filling up the calendar, having our Menu Planning 5/3-5/16/26 makes such a difference during the week.
Because of our busy schedule, I’m trying to be a little intentional about using leftovers (like turning grilled chicken into burritos), which always helps simplify things.

- Burritos (can make with leftover lemon chicken), serve with Mexican rice

Let’s Discuss!
Over the past 2 weeks we tried quite a few different recipes. We have Matt to thank since he keeps sending me recipes he finds on instagram and facebook. The algorithm has us figured out pretty well though since they have been hits! Here are our thoughts on the recipes we tried:
- Peanut Butter Streusel Brownies– These are very tasty and incredibly rich. Prepare to cut them small! Love the peanut butter streusel topping!
- Korean Beef Bowls– Double this recipe! You will thank me later. We just made 1 lb of meat and were all sad there weren’t leftovers to eat. So delicious and pretty quick to pull together.
- Spicy Thai Peanut Chicken– Matt found this recipe. It was really good! We all really liked the chicken. It would be easy to lower the carbs by eating it over lettuce.
- Greek Meatballs in Lemon Sauce– I thought these were delicious and I loved the bright lemon flavor. The sauce was fairly runny so in the future I will add more cornstarch. I served it over egg noodles.
- Marshmallow Chocolate Chip Shortbread Bars– These were just ok. Similar to a cookie bar, but with marshmallows on top.
That’s everything for this round of Menu Planning 5/3-5/16/26. I’m looking forward to keeping things simple and having a plan in place as May gets busier.
