
This Menu Planning 4/19-5/2/26 post is coming together after a busy couple of weeks and a very running-focused weekend—literally! Claire and I did a 5K yesterday, and today I’m heading out for a half marathon while she takes on another 5K. It’s been a fun (and slightly exhausting) way to kick off the weekend.
Having a plan going into the week always helps things feel a little more manageable, especially on those nights when everyone is coming and going at different times. I’ve got a mix here of easy dinners, a few new-to-us recipes, and something fun to bake.

- Korean Beef Bowls*
- Greek Meatballs in Lemon Sauce*
- Spicy Thai Peanut Chicken*
- Sausage wreath (based on this recipe), cook 1lb Italian sausage in skillet, mix in 1 pkg. thawed frozen chopped spinach, 8oz softened cream cheese. Arrange 2 tubes of crescent rolls on baking sheet in circle with points facing outwards (like a sun). Fill with sausage mixture and bring points over top of filling and tuck underneath for wreath shape. Bake at 375 for 10-20 minutes until golden brown.
- Marshmallow Chocolate Chip Shortbread Bars*

Here are a few things we tried recently that are worth mentioning:
- Blueberry Pretzel Salad– This was very good! Quite a few people mentioned how much they liked it during Easter. Matt and Claire were big fans.
- One Pot Beef, Bean, and Lentil Ragu– Matt sent me this to try. I altered it to make in the slow cooker. It was easy! I added all ingredients except the Greek yogurt and parmesan and cooked on low for 8 hours then added those diary ingredients at the end.
- Stroopwafel cake– I saw this on Nicole’s blog and loved the idea! It turned out really well. We enjoyed warming it up before eating it.
That’s everything for this round of Menu Planning 4/19-5/2/26. I’m looking forward to trying a few new recipes and keeping things simple where I can. This time of year always feels a little busy, so having even a loose plan makes a big difference.
