Menu Planning 7/26-8/8/26 feels a little different around here because swim season is finally over. Or at least until mid-September. It will be so nice to have our evenings and weekends back after such a busy summer. This week the girls are also heading off to Girl Scout camp until Friday. It will be Avie’s first time at overnight camp, and she’s so excited. With a little extra time at home, I’m looking forward to getting back into a more normal cooking routine and trying a few new recipes alongside some family favorites.
- 7/26-8/1
- Currywurst
- Paninis (I toss chicken breasts in the slow cooker with seasonings and cook on low all day then shred. Serve with fresh mozzarella, tomatoes, spinach, basil, whatever you want! Get naan, ciabatta bread or your desired bread. Cook on panini press, George Foreman grill, or on your stovetop.) Serve with fries or sweet potato fries.
- Jerk Chicken and Mango Slaw Bowls*
- Frittata sub
- Key Lime Pie
- 8/2-8/8
- One Pot French Onion Pasta
- Peanut Dragon noodles (I tossed in broccoli with it to add veggies to the meal and they were so good coated in the sauce!)
- Korean Ground Beef Tacos*
- Sloppy Joes
- Dreamy Canoli Cheesecake Bars*
Let’s Discuss!
Before jumping into this week’s menu, here are a few thoughts on the new recipes we tried over the last couple of weeks. As always, I love sharing what was worth making again (and what wasn’t) to help make your own meal planning a little easier.
-
- Spicy Taco Sweet Potatoes– These were delicious! I think next time I will cube then roast the sweet potatoes. It will add more crunch and texture.
- Blackberry Lemon Cake– I’m not sure I’d recommend this. The cake was good. But the frosting wouldn’t set up for me. I think there was too much cream cheese or I should have whipped the cream and folded it in. The Lemon Berry Mascarpone Cake I made a couple weeks ago was much better.
- Ground Beef Shawarma Bowls– We loved these! Pretty easy to make, too. I haven’t seasoned rice with tumeric before, but it was very tasty.
- Baked Cajun Salmon with Avocado Lime Sauce– Matt was gone the past 2 weeks for work so I didn’t have a chance to make this since I wanted him home when I did. I am hoping to make it for dinner tonight!
I hope Menu Planning 7/26-8/8/26 gives you a few fresh dinner ideas to add to your own rotation. With summer winding down and routines starting to settle in again, having a simple meal plan always makes our weeks run a little smoother. If you try any of these recipes, I’d love to hear what you think!
