
The last couple of weeks have been a little different around here thanks to evening swim meets. Between getting the girls fed before heading to the pool and not getting home until late, we’ve relied on quick sandwiches and easy meals more than usual. That also means I still have a couple of recipes left over from the last menu plan that I’m excited to finally make. Now that our final evening swim meet is behind us, I’m looking forward to getting back into our normal routine and sitting down for more family dinners over the next two weeks. A Few Thoughts on This Week’s Recipes
Here’s how Menu Planning 7/12-7/25/26 is shaping up so far. Even though I didn’t get around to making every recipe I had planned over the last two weeks, we still had some definite winners. That’s one thing I love about menu planning—the plan is flexible. Sometimes life gets busy, and those recipes simply roll over to the next week.
- Lemon Berry Mascarpone Cake– Oh my sweet goodness. I made this on our anniversary to try and replicate a dessert we had on vacation. It was even better! It was a process, but so worth it.
- Banana Bars with Salted Caramel Frosting– The salted caramel frosting makes takes this to the next level! Definitely something I need to make again.
- Slow Cooker Ruben Dip– We needed an Irish themed appetizer for a party we went to and I made this. It was really easy and Matt loved it.
- Ground Beef Shawarma Bowls– Swim season got in the way of making these, but they’re first on my list this week. They look packed with flavor and perfect for an easy weeknight dinner.
- Chimichurri Grilled Chicken with Garlic Sauce– This is another recipe that got pushed back because of our busy schedule. I’m really looking forward to trying it because the fresh chimichurri and creamy garlic sauce sound like such a delicious combination.
With evening swim meets behind us, I’m excited to get back into the rhythm of cooking and enjoying dinner together as a family.
