
Last weekend and this weekend are busy with swim meets, soccer, and celebrations. I had to quickly pull together a menu last night to help me plan for 5/17-5/30/26. Sometimes our weekends are so crammed it feels overwhelming to even think about adding in shopping for food. In the end, it all gets done though, doesn’t it? I imagine that is what students feel about finals. It’s daunting and overwhelming, but there is an end to it all! And that end is summer break that starts after this week for me. Hurray! Here are some quick and easy meals for our Menu Planning 5/17-5/30/26 that I pulled from my list of favorites.

- Artichoke Chicken with roasted asparagus
- Slow Cooker Pulled Pork serve on buns with sweet potato fries (save leftover meat for next week!)
- Tuna salad melts
- German Chocolate Caramel Brownies

Over the past 2 weeks I tried a couple of new recipes along with some favorites. I always like mixing in something new each week, even when our schedule is busy, because it keeps things from feeling repetitive. Some of these were definite wins, and a few just needed a small tweak to make them even better.
- Sheet Pan Chicken Pitas – We all loved these! The chicken dried out a bit in the oven. When I make them again, I will saute them.
- Beefy Garlic Butter Bowl– Delicious! Needed a bit of extra seasoning and the cheese sauce was tricky. I added cornstarch dissolved in water to help it all come together. Matt especially liked this.
- Amaretto Brownies– Very similar to the mint brownies I make, but with an almond flavor. I loved them, but thought they were a bit too sweet. I would skip pouring amaretto over the brownies to cut down on the sweetness in the future.
