September is here, and Menu Planning 9/6-9/19/26 should probably be full of pumpkin, soups, and cheesy comfort food…except Mother Nature apparently missed the memo. We’ve had some seriously unseasonable heat this week, with three straight days of games and practices canceled because of the heat index! Needless to say, cozy fall flavors haven’t sounded quite as appealing as I’d hoped.
Thankfully, temperatures are finally supposed to start dropping later this week, and the timing couldn’t be better. Fall swimming starts next week, which means our evenings are about to get even busier. I made sure to work a few slow cooker recipes into the next two weeks along with some lighter meals, easy favorites, and, of course, a couple of desserts!
- 9/6-9/12
- 9/13-9/19
- Skinny Greek Yogurt Enchiladas
- Slow Cooker Jambalaya
- Belgian Waffles with sausage links and fresh fruit
- Creamy Pesto Beans*
- Sugar Cookie Cheesecake Bars
What We Thought of Our Recent Recipes
We’ve had a couple of definite winners from recent menu plans! I always like sharing what we thought after actually making the recipes, including any swaps I made along the way. Here’s how these two turned out:
- Caramelized Zucchini and Sausage Pasta– I had some cooked chicken leftover that I used instead of sausage, but it was still good. The toasted breadcrumbs added some nice texture on top.
- Mint Chip Sheet Cake– This was delicious! The frosting makes the cake. The girls could not believe how close it tasted to mint chocolate chip ice cream.
That’s our Menu Planning 9/6-9/19/26! Hopefully cooler weather is finally on the way so we can start easing into those cozy fall meals I’ve been craving. Until then, we’ve got plenty of delicious dinners to get us through busy swim nights! What’s on your menu lately?
