
I am more than ready for fall food, but apparently the weather hasn’t gotten the memo! It’s been so hot and humid lately that even though I’m craving all those cozy fall flavors, it’s hard to actually put them on the menu. I swear chili, soups, pumpkin, and butternut squash just taste better when there’s a little chill in the air.
Thankfully, we’re supposed to have some cooler weather coming our way, so Menu Planning 9/20-10/3/26 is finally starting to look a little more like fall. I’m easing into soup season with a couple of cozy recipes and adding some pumpkin to the mix with a caramel cider pumpkin sheet cake. Fingers crossed the weather cooperates!

- Slow Cooker Enchilada Meatballs– Matt was in love with these! I served them over cilantro lime rice and he raved about them all week. And they are a super easy dump-and-go recipe. Definitely a win!
- Creamy Pesto Beans– We love the Cheesy White Bean-Tomato Bake and this looked like a good alternative. I added sausage for some extra flavor and protein, and it turned out so well. I loved it and took the leftovers for lunch all week. The pesto adds so much flavor and makes it different enough from our usual white bean recipe.
I’m especially looking forward to the soups and pumpkin cake in Menu Planning 9/20-10/3/26. It feels like we’re finally making that transition from summer meals to cozy fall food. Now I just need Mother Nature to get on board! What fall recipe do you start craving as soon as the temperatures drop?
