Menu Planning 3/22-4/4/26 is focused on easy, family-friendly meals as we head into spring break mode. With packing to do and a fridge to clean out, I’m keeping things simple with recipes that are quick to prep, use ingredients we already have on hand, and don’t require a lot of extra effort. There’s a mix of cozy comfort meals, a few lighter options, and some fun treats—perfect for busy days leading up to time away.

- Cheddar Bay Ground Beef Cobbler
- Crockpot Crack Chicken Sandwiches

Let’s Discuss
Over the past 2 weeks, we tried a couple of new recipes that turned out to be total wins. Both were quick to make, super simple, and packed with flavor—always a combination I’m looking for this time of year. I’m hoping the new (to us) recipes in this Menu Planning 3/22-4/4/26 lineup are just as well-loved!
- Dill Pickle Ranch Smash Chicken Tacos– Matt made these, and they were such a hit. We used high-protein taco shells and swapped Greek yogurt for sour cream to keep things a little lighter. The crunch from the shells was so good, and the flavor combo was really fun.
- Buffalo Chicken Sweet Potato Nachos– These were another easy one with minimal hands-on time. I love that you can sneak in extra veggies by grating zucchini into the meat—I added two instead of one, and no one noticed!
I’d love to hear what’s on your Menu Planning 3/22-4/4/26—any easy wins or new recipes your family has loved? I’m always looking for simple, go-to meals to add to the rotation, especially during busy seasons like this!
