
Last week I made a big pot of taco soup and we have been enjoying the leftovers so much. It’s been so cold lately that soup warms us up from the inside. Bonus if the soup is made in the crockpot. Although I have a couple of soups on our Menu Planning 1/25-2/7/26, I switched it up a bit as well.

fter I started doing menu planning for a few months, I began saving them to look back on, and it’s been so helpful. It’s an easy way to remember recipes we actually enjoyed instead of forgetting about them. Around this time last year, we loved the Teriyaki Chicken Crispy Rice Salad and Crispy Lemon Tofu so I added them to the menu. Over the past 2 weeks, I also tried a couple of new recipes that were definite wins.
- Turkey and Cheese Sandwich with Caramelized Onion and Fig Jam– I saw these and was reminded of Claire. My intuition was right because she loved them! They were easy to make and I loved the flavors.
- Almond Marzipan Cookie Bars– Mine looked nothing like the picture, but they were so good! My family doesn’t care for chopped almonds, so I drizzled chocolate on top after baking instead. Matt is obsessed.
