
Winter routines are back in full swing, which means having a plan for dinners makes life feel a little more manageable. This Menu Planning 1/11-1/24/26 focuses on cozy slow cooker meals, easy weeknight favorites, and a few fun comfort foods that work well for busy schedules. I’m also intentionally planning leftovers to stretch into the following week, which always helps save time and energy during the winter months.

- Sweet & Spicy Slow Cooker Chili
- Slow Cooker Pulled Pork serve on buns with sweet potato fries (save leftover meat for next week!)
- Fish Tacos (I use this recipe as a base, season my fish with Ras Al Hanout seasoning and serve with avocado or guacamole, siracha aioli, and cilantro on a tortilla)
- Belgian Waffles with sausage links and fresh fruit
- Crunchers
1/18-1/24
- BBQ french bread pizza (BBQ sauce, pulled pork, red onions, cheese, on french bread sliced lengthwise. Bake 350 for 10-15 min until cheese begins to brown
- Slow Cooker Posole
- Foil Packet Chicken
- Turkey and Cheese Sandwich with Caramelized Onion and Fig Jam*
- Almond Marzipan Cookie Bars*

Over the past couple of weeks, I tried a few new recipes and revisited some favorites. Here’s are my thoughts on the new recipes and what’s still on deck as part of this Menu Planning 1/11-1/24/26 rotation:
- Sausage Stuffing– I made a version of this before, but we liked this! It came together quickly and we liked the bit of crunch and cheese on top. I swapped the celery for broccoli and spinach instead.
- French Onion Sausage Rolls– These were so good! They were surprisingly quick and easy to make as well since the sausage does not need to be pre-cooked.
- Marry Me Shrimp Pasta– I did not get a chance to make this yet, but will share when I do!
These kinds of notes always help me decide what’s worth repeating and what to tweak next time.
