
What a couple of weeks it’s been! Between holiday celebrations, end-of-year activities, and lots of family time, our meals have leaned festive and indulgent lately. As we wrap up December and ease into January, I’m ready for a simple reset with cozy, low-stress dinners that don’t require a ton of planning. This Menu Planning 12/28-1/10/26 focuses on comforting family meals, a few easy slow-cooker options, and simple desserts to help us transition out of the holidays without feeling overwhelmed.

Let’s Discuss!
Over the last two weeks we’ve done a lot of celebrating over meals. I did get the opportunity to try out a few new recipes though. Here are our thoughts:
- French Onion Pot Roast– Absolutely delicious! Super flavorful and tastes so good over mashed potatoes. I think next time I want to try it in the slow cooker instead of the oven.
- Jalapeno Popper Soup– We made this for Christmas Eve. It was very quick and easy to make which was perfect after church service. Very flavorful and not too spicy (we didn’t add jalapeno seeds).
- Crack corn salad– This was one of the dishes we made for our family Christmas. It was a delicious side and I loved that we could make it ahead.
- Lemon Cookie Bars– I had these on our menu in November and finally made them. They were amazing. My husband loves lemon flavor and was a big fan. I might add something to the frosting next time to cut down on the sweetness though.
After weeks of celebrating and gathering, it feels good to settle back into a simple routine. This Menu Planning 12/28-1/10/26 keeps meals comforting, manageable, and perfect for easing into the new year.
