It’s week three of Kim’s and my cookie collaboration (check out Week 1 and Week 2!) which means another week closer to Christmas and a week LESS of time to get everything done! I am starting to feel the panic. Holiday parties, lack of presents wrapped, lack of shopping completed, and a crazy work schedule to get everything done before winter breaks starts. Oh boy. Thank goodness I baked cookies so the chocolate can help me through the stress. Chocolate has endorphins, right? At least I feel happier after eating some!
I love chocolate crinkle cookies and I added some mint extract to give these cookies a little something extra. Mint and chocolate is one of my favorite flavor combinations around the holidays!
1. Well, what are you waiting for? Get out all the stuff! You’ll need 1/2c. butter, softened, 1 2/3c. sugar, 2t. vanilla, 2 eggs, 1/3c. cocoa, 2t. baking powder, 1/2t. salt, 2c. flour, 1/3c. milk, and powdered sugar.
2. Don’t forget the mint extract! I added approximately 2T. to my batch. They have a nice minty flavor, but it’s not overwhelming.
3. Cream together the butter and sugar.
4. Add in the remaining ingredients, except the powdered sugar. Cover and chill at least 3 hours. I chilled mine overnight.
5. Take the batter by teaspoonful, roll and coat in powdered sugar. I did not roll the dough. I find that to be very messy and the dough softens too much from the heat of your hands. I just took a spoonful at a time and dropped it into the powdered sugar and rolled it around. They weren’t perfectly round on the cookie sheet, but they rounded out nicely as they baked.
6. Bake at 350F for 14-15 minutes. Cool on tray.

Chocolate Mint Crinkle Cookies
Ingredients:
1/2c. butter, softened
1 2/3c. sugar
2t. vanilla
1 1/2-2T. mint extract
2 eggs
1/3c. cocoa
2t. baking powder
1/2t. salt
2c. flour
1/3c. milk
powdered sugar
Directions:
1. Cream butter and sugar. Beat in vanilla, mint extract, eggs, cocoa, oil, baking powder, and salt. Add flour alternately with milk. Chill 3 hours.
2. Preheat oven to 350F. Grease cookie sheets. Roll teaspoonfuls of chilled dough into balls and roll in powdered sugar. Bake 15 minutes. Cool on sheet before removing. Makes approximately 4 dozen.
