Between birthdays, end of summer plans, and fall athletics, I was not able to make everything on our menu. But I had to try that PB and Jelly pie! Here are my thoughts about new recipes I tried over the past 2 weeks:
- Thai Peanut Tofu Bowls– Finally made these! I skipped the kale because my family is not a fan. But added cucumber and diced jalapeños. They were so filling and good!
- Peanut Butter & Jelly Pie– This was work intensive. To cut down on time I used store bought jam and graham cracker crust. There was enough leftover filling, jam, and PB crumbs to make a little dish. It was delicious! I bet you could cut down on calories by using far free cool whip, too.
- Bang Bang Chicken Sliders– It was a busy week so I didn’t make these yet, but I’m looking forward to it! They look good.
With the next 2 weeks’ menu, I am focused on clearing out a few things from our fridge and freezer before they go bad. I always try to review leftovers, produce, and more before making our menu so food doesn’t go to waste. It saves money, but also offers inspiration for dinner ideas!
