Let’s Discuss!
I was having a discussion with someone about how they don’t make soup in summer. It’s too hot for me. I don’t start making soup until September. So with Matt’s smoked pork leftovers, I’m making chili mac probably the first week of September. I kind of figured that was how most people thought. But now I’m curious! Let me know if you make soup year-round or when you start incorporating it into your dinners. Here are my thoughts on the new recipes I tried over the past 2 weeks:
- Dirt Cake– Claire had so much fun making this. It’s a poke cake so it’s really moist, too.
- Bacon Broccoli Mac and Cheese– So good in theory, but not in execution or flavor. Although I added salt and garlic to the roux, it still was quite bland. If you make this, I’d recommend a lot more seasoning and/or adding another cup of cheese to the sauce before mixing it with noodles. Loved the broccoli addition and bacon on top though.
- Baked Pineapple Salmon– After having this I realize I may have made it before. It’s still good though. I had the leftovers with salad the next day.
- Rhubarb Cake with Butter Sauce– This is delicious! The butter sauce is the cherry on top. Two thumbs up!
Whenever Matt is out of town, we rely on leftovers a lot. It’s just easier when you are taking on the role of 2 parents. So I didn’t get the chance to make this:
- Thai Peanut Tofu Bowls– I didn’t get a chance to make these, but hope to tonight.
