
Back to school and back to work! I start work Monday. Students come back Thursday or Friday depending on grade level. My girls go back next week. I can’t believe the summer is over. Since it has been so hot lately, I planned a few lighter meals for my Menu Planning 8/10-8/23/25! Don’t forget I also I post weekly recipes through the link on my instagram profile. - High Protein Pizza Rolls– I brought these on our girls’ trip and they were a hit! I add extra veggies like spinach, zucchini, and bell pepper to bulk them up.

- Dirt Cake*– Claire saw this and wanted to make it for the family.

Since we had some fun activities planned, I actually didn’t end up making everything on our set menu. Here are my thoughts on the new recipes I did try though:
- Jalapeno Popper Spread -I baked this over grilled chicken as a meal. We ate it with toasted bread pieces, but also as filling in omelettes and grilled sandwiches. It was very good.
- Icelandic Hot Dog– These were pretty spot on. I cooked all beef Angus beef hot dogs in beer, made the remoulade from scratch, and layered it up on toasted buns just like in Iceland. Yum!
- One Pot French Onion Pasta– I made this last night and both girls had second servings. I added spinach and it added some nice color. It would be good with beef, too!
I had these on the menu, but never had the chance to make them since we had some meals out. I do plan to make them in the next 2 weeks though!
