Menu Planning 7/13- 7/26/25
7/13-7/19
- Arby’s Beef and Cheddar Sandwiches (slow cooker)
- Tuna salad melts
- Honey Mustard Pork Chops (1:1 mixture of spicy mustard and honey and spread on pork chops. Grill.)
- Chicken Shawarma Crispy Rice Salad
- Chocolate Chip Cookie Dough Gooey Butter Bars
7/20-7/26
- Sloppy Joe Sweet Potato Bowls
- Dill Pickle Ranch Chicken Skewers*

First post after coming back from Iceland! It’s already been a whirlwind getting back into swim meets, caught up on ALL. THE. LAUNDRY. and of course, eating healthier since we ate out for all of meals during our trip.
Here is a review of what I tried in late June:
- Crockpot Kung Pao Chicken– I haven’t had a chance to make this yet-we were trying to clear the fridge. You’d better believe I will try it soon!
- Salsa Verde Chicken and Rice Skillet– This was an easy skillet to whip up and even add in some extra veggies. Quite tasty!
- Chimichurri Grilled Chicken with Garlic Sauce– I made these and added roasted sweet potatoes and corn instead of kale (my family is not a big fan). Yum! Next time I want to add roasted chick peas for some crunch.
- Tzatiki Chicken Pizza– I used pre-made Tzatiki Sauce and extra chicken from a different recipe. These were pretty fast to put together. They were delicious!
- Fluffernutter Pie– This was amazing! I also added a scoop of PB powder in with the whipped cream and it really added extra peanut butter flavor. It isn’t overly sweet either.
We tried some delicious food during our trip. It’s fun to be exposed to different cultures and their cuisine. I hope to try some of these dishes we had in the future:
- Icelandic Fish Stew- Very thick stew with lots of potato.
- Thunder Bread– A moister, sweeter version of rye.
- Icelandic Hot Dogs– Grilled bun, 3 sauces, diced onion, and fried onions.
