
March is here, which means we’re starting to lean into some fun St. Patrick’s Day-inspired meals. This Menu Planning 3/8-3/21/26 includes a mix of easy weeknight dinners, a couple of new recipes to try, and a few classics that always make everyone happy at the table.
With activities still keeping us busy during the week, I tried to balance simple meals with a few that feel a little more special. I also added a few Irish-inspired dishes as we get closer to St. Patrick’s Day.

- Bangers and mash
- Dill Pickle Ranch Smash Chicken Tacos*
- Smoky 4 Bean Chili
- Paninis (any cooked meat sliced small with your choice of toppings, I like fresh basil, tomato and mozzarella) served with fresh fruit and sweet potato fries
- Irish Apple Cake

I had a few standout recipes from the last menu plan.
- Sheet Pan Pineapple Chicken Tacos– These were incredibly easy to throw together and the fresh pineapple on top added such a bright flavor. Those will definitely stay in our rotation.
- Smash Burger Bowl– Another big win. Everyone loved it, although next time I’ll definitely make extra potatoes because they disappeared quickly.
- Bulgogi Cheesesteak– These had great flavor, but I kept wishing there was a sauce to tie everything together. I might experiment with adding something creamy next time.
