I had some new recipes on the list to try over the past two weeks. I was pretty excited about the BBQ Cheddar Meatloaf especially. Here are my thoughts on the recipes I tried:
- BBQ Cheddar Meatloaf– I loved the flavor of this! It could have used a bit more breadcrumbs though. I doubled the recipe as well. We put hot honey over top and it was delicious!
- Baked Pineapple Salmon– We had this last night. It was easy to make and had a refreshing tropical twist with the pineapple.
- Irish Potato Soup– We had this for St. Patrick’s Day with some soda bread. It was so good!
I’m not sure if I will be making all of these recipes since our next two weeks will be a bit crazy. I’m on my school’s spring break, but my kids are still attending. Then Friday they leave with Matt for Arizona. They get some fun with their grandparents in the warm weather for a week. While they are gone I will probably make only a few dinners like the sweet potatoes and eat the leftovers, but switch up what I am piling on top that week. It’s a nice, versatile meal to have.
