
I’m just a girl, trying to get dinner on the table. I completely understand how hectic life can get. Meal planning is a great idea in theory, but sometimes our minds are so busy trying to plan, schedule, and solve other issues in our lives ,that it takes a back burner. I do like meal planning though because when it works, it really saves time! By meal planning, I make 1 grocery shopping trip every 2 weeks. I don’t have to run to the store several times a week to grab items for a dinner I am making at the last minute. With a little planning ahead, I can avoid the dinner panic at 5pm, save money and time by having ingredients and meals ready to make on hand. Hopefully these ideas make meal planning a little easier and faster for you all!

Over the last 2 weeks I have tried a few different recipes. I haven’t had a chance to make Butter Beer Cake yet and we are having the Rosemary Garlic White Bean Soup tonight. Yum!
- Butternut Squash Tortellini Soup– I loved this! I cooked the squash first and had it ready for the soup so prep went a lot faster the night of.
- Nutter Butter Bars– If you like peanut butter, these are for you! The layers seem like a lot of effort, but are actually pretty easy to assemble.
- Slow Cooker Chicken Mole– I think this was just okay. The sauce was too thick and I had to had over a cup of water to it. I’ll make mole again, but try a different recipe.
