
How do you decide what to make for dinner? Our menu is typically a combination of requests of tried-and-true recipes by my family, new recipes I’ve seen, and trying to find recipes to use what we have in the fridge or freezer that needs to go. Once I actually started menu planning in advance, it got easier. I took my menus and listed them in a document with the dates. Then I can reference back what we had last year around this time for ideas. That way recipes we love or new recipes we have tried don’t really fall out of circulation. It’s soup season and I’m so here for it. I like to make soup about once a week in the fall and winter. It’s warm, comforting, and normally fairly healthy. I like that I can often add in extra veggies that are about to go bad to cut down on food waste, too. Last week there was an email from Better Homes and Gardens with a recipe link for Swamp Soup. The name alone caught my attention so I have to make it, right?! Have you ever tried Swamp Soup? I have some pierogis leftover from a casserole and found a Dill Pierogi Soup recipe to use them up. Both of the soups look so tasty! Over the last 2 weeks, I tried 2 new recipes. Here are my thoughts:
- Crunchy Chickpea Salad– I made this for dinner and we all liked it. There are many layers of flavor and texture that are very enjoyable. I served it with naan.
- Root Beer Float Brownies– These are so rich and delicious. I wish the frosting was a bit fluffier instead of an icing consistency. I couldn’t find root beer extract and used vanilla instead. I think the extract would have made the frosting so much better. The brownies have a lovely subtle taste of root beer.
