SELF has some amazing recipes sometimes! I’ve really hit the jackpot with a few of them. The basil flavor in these burgers is delicious and a great way to use fresh basil from our plant.
1. First mix 1/4c. low fat or fat free mayonnaise, 1/2T. fresh chopped basil, 1/2T. chopped parsley, and 1t. lemon juice. You will use this on your hamburger later.
2. Mix 16oz. ground chicken, 1/2T. fresh chopped basil, 1/2T. parsley, 1 small chopped onion, 3T. seasoned bread crumbs, and 3T. fat free ricotta cheese. I really like to make these the same week I make Sausage Spinach Calzones. You can make the calzone recipe with a little less ricotta cheese and it turns out fine and the calzones are a great, yummy way to use up the rest of the ricotta cheese.
3. Form into 4-5 patties depending on the size you like. Obviously my husband and I like different size burgers so we make some big and some smaller. Grill until done, about 6 minutes on each side. Serve with seasoned mayo on a bun with tomato slice. If you have large basil leaves, it is also really good to put a basil leaf instead of lettuce on the burger!

Basil Chicken Burgers
makes 4 servings
Ingredients:
1/4c. fat free mayonnaise
1 T. chopped parsley
1 T. chopped basil (and 4 large whole basil leaves)
1t. lemon juice
16oz. ground chicken
1 small onion, finely chopped
3T. fat-free ricotta cheese
3T. seasoned bread crumbs
4 hamburger buns
1 small tomato, sliced
Directions:
1. Stir together mayonnaise, 1/2T. parsley, 1/2T. chopped basil, and lemon juice in a small bowl. Set aside.
2. Mix chicken, remaining parsley and basil (except those 4 leaves), onion, ricotta, and bread crumbs together in a bowl. Form into 4 patties. Grill until patties are cooked through.
3. Serve on bun with 1 basil leaf, mayonnaise mixture, and tomato slice.
