To me the holidays are always a time to spend with family having fun and eating delicious food! We are fortunate to have amazing cooks on both sides of the family who always make incredible dishes to pass. There is never enough room on my plate to sample all the tasty options there are. There are always the traditional favorites, but there are also new appetizers, main dishes, side dishes, and desserts to try. I am constantly asking for recipes afterwards from my relatives afterwards! Because we live a couple hours away, I try to think of a recipe that will travel well and heat up easily in the oven once we get there.

Pasta dishes are always a big hit in our household and easy to make so this year I've decided on a pasta dish to bring. The best part is it incorporates ingredients that are red and green so it looks festive and uses Louis Kemp® Crab Delights® Chunk Style which will definitely be a crowd pleaser!

I love cooking with crab and my family loves it, too! It adds great flavor to many dishes and works well in appetizers or main dishes. Crab Delights are easy to use and easy to find in the grocery store. I found mine in the refrigerated seafood section at our local Meijer store. You can even find a $1.00 off coupon for Crab Delights here

The best part about using Louis Kemp Crab Delights is that they are made with premium Wild Alaskan Pollock fillets. They are gluten-free, a good source of protein, and naturally low in calories and cholesterol. That is a definite plus with all the holiday indulgence I plan on doing! And Louis Kemp is a family owned company. From the catch to the customer, they control every step of the way. I feel like I am getting quality products when I buy Louis Kemp.

Making this dish is quick and easy. With the red pepper, spinach, and asparagus it is quite festive this time of year, but would really be good year round!

To make this casserole you will need:
  • 8oz package of Louis Kemp Crab Delights Flake Style or Chunk Style

  • 19oz package frozen cheese tortellini
  • 1 red bell pepper, chopped

To prepare it:
  1. Preheat the oven to 350. Grease a 9x13 baking dish.
  2. Prepare tortellini according to package directions. If there is a suggested range of time for boiling, boil it for the shortest amount suggested. Thaw spinach and squeeze out extra water.
  3. Combine Crab Delights, tortellini, spinach, Alfredo sauce, chopped red pepper, basil, minced onion, and half of mozzarella cheese in a large bowl. Transfer to baking dish.
  4. Top crab and tortellini mixture with frozen asparagus. Sprinkle remaining mozzarella and parmesan cheese over top. Bake for 30 minutes until cheese is melted and edges are golden brown. Enjoy!

  9. It's so funny because back during Thanksgiving I kept asking everyone what's a casserole, exactly? I wasn't born in the U.S. so my family has never made a casserole or used the word casserole. But I hear it all the time. I thought it was a specific dish, but apparently it's just the dish that a dish is put in.

Anyway, I love this idea of a pasta style casserole. Really cool.

  13. Oh, YUM! So glad to see reference to this recipe on your recap today. Pinning. Might have to weight until I give up on my new year's resolutions before preparing. That could happen momentarily. Looks delicious.
