When I saw this recipe a few months ago in my Taste of Home Ultimate Five Ingredient Recipes book I was a bit skeptical. It sounded refreshing and like the perfect summer dessert. However, I have not had much success with pies keeping their shape when using gelatin. Typically I make them according to the recipe then cut them and they fall apart as soon as I try to scoop them out.
But, with it’s low calorie and low fat ingredients that seemed like they would be high in flavor, I decided to give it a shot. I also reasoned that even if a pie falls apart before it gets to the plate, they always taste good! I’m so glad I made it. The pie was everything it was cracked up to be and I really liked the lemon and graham flavors together. I kind of want to alter the recipe in the future and use different flavor gelatins or drink mixes! Maybe a strawberry lemonade pie? Or orange and lime? What do you think?
Lemonade Pie
Ingredients:
1 pkg sugar free lemon gelatin
1 pkg (8oz) fat free cream cheese, cubed
1 3/4 t. sugar free lemonade drink mix
1 reduced fat graham cracker crust (8 in)
6 T. fat free whipped cream
Directions:
1. Make gelatin according to package directions. Chill gelatin in fridge until almost set.
2. Place gelatin, cream cheese and lemonade mix in a blender, cover, and blend until smooth.
3. Pour into graham cracker crust and refrigerate overnight. Top with whipped cream and enjoy!
