Lemonade Pie


When I saw this recipe a few months ago in my Taste of Home Ultimate Five Ingredient Recipes book I was a bit skeptical. It sounded refreshing and like the perfect summer dessert. However, I have not had much success with pies keeping their shape when using gelatin. Typically I make them according to the recipe then cut them and they fall apart as soon as I try to scoop them out. 



But, with it's low calorie and low fat ingredients that seemed like they would be high in flavor, I decided to give it a shot. I also reasoned that even if a pie falls apart before it gets to the plate, they always taste good! I'm so glad I made it. The pie was everything it was cracked up to be and I really liked the lemon and graham flavors together. I kind of want to alter the recipe in the future and use different flavor gelatins or drink mixes! Maybe a strawberry lemonade pie? Or orange and lime? What do you think?


Lemonade Pie
Ingredients:
1 pkg sugar free lemon gelatin
1 pkg (8oz) fat free cream cheese, cubed
1 3/4 t. sugar free lemonade drink mix
1 reduced fat graham cracker crust (8 in)
6 T. fat free whipped cream

Directions:
1. Make gelatin according to package directions. Chill gelatin in fridge until almost set. 
2. Place gelatin, cream cheese and lemonade mix in a blender, cover, and blend until smooth. 
3. Pour into graham cracker crust and refrigerate overnight. Top with whipped cream and enjoy!

  1. It looks like it turned out perfectly! It sounds delicious, but I'm allergic to cream cheese (it's honestly in so many delicious desserts!) so I'll have to pass on this one!

  4. Haha, yes, I've had some lemon merengue soup before! Such a shame when a pie doesn't set, so I'm glad this one came out perfect!
