There are certain recipes I love making in the summer. They are perfect ways to use those delicious garden vegetables! This is one is great for spinach, cucumber, and tomatoes. It’s a nice light meal that doesn’t need the oven on. Who wants an oven heating up the house on a hot summer day anyway?!
Mediterranean Turkey Pita
Ingredients
1 lb ground turkey
1 1/2t. dried oregano
1 1/2t. garlic salt
1 2/3c. ranch dressing
1 3/4c. peeled and copped cucumber
pita bread (or naan)
spinach
cherry tomatoes, halved
crumbled feta cheese
Directions
1. Brown turkey in a large nonstick skillet over medium heat. Cook until no longer pink and drain off fat. Add oregano and garlic salt to meat and mix.
2. In a small bowl, mix chopped cucumber and ranch dressing.
3. If desired, in a fry pan place a small amount of olive oil and about 1/4t. garlic powder. Lightly brown the pita on both sides (or naan if using that).
4. Top each pita with turkey, ranch/cucumber mixture, spinach, tomato, and feta cheese.
