Another week closer to Christmas, and another cookie recipe. I hope you have been enjoying this series with Kim at Fairy Wings Make Good Soup as much as I have! My mom has been making these cookies around Christmas time for as long as I can remember. They have a buttery shortbread flavor and look so pretty on a cookie tray. I love that one batch can make 5 dozen! Another nice option about these cookies is that you can make them as you need them. Just slice a dozen or so and refrigerate the rest until you need them!
1. Get out everything you need. Except the cocoa powder. You don’t need that. Ignore that in the picture. 🙂 You’ll need 1c. butter, softened, 1 1/2c. sugar, 1 egg, 1t. vanilla, 2 1/2c. flour, 1 1/2t. baking powder, 1/2t. salt for the basic dough. You will also need 1/2t. almond extract, red food coloring, 1/2c. chopped pecans, and 1oz. square unsweetened chocolate, melted.
2. Cream the butter, sugar, vanilla, and egg together. Mix flour, baking powder, and salt together and mix into creamed mixture. Divide dough into 3 equal portions.
3. Take the first portion and mix in almond extract and 5 drops of red food coloring. Press into loaf pan lined with wax paper.
4. Take the second portion and mix in chopped pecans. Press into loaf pan on top of pink layer.
5. Take the final portion and mix in melted chocolate. Press into loaf pan. Cover and chill for several hours.
6. Remove from fridge and take off wax paper. Cut in half lengthwise. Slice each half crosswise into 1/8″ thick slices. Place on ungreased cookie sheet 1 inch apart. Bake at 350F for 10-12 minutes.

Neapolitan Cookies
Ingredients for Basic Dough:
1c. butter, softened
1 1/2c. sugar
1 egg
1t. vanilla
2 1/2c. flour
1 1/2t. baking powder
1/2t. salt
Additional ingredients:
1/2t. almond extract
red food coloring
1/2c. chopped pecans
1oz. square unsweetened chocolate, melted
Directions:
1. Line bottom and sides of a loaf pan with wax paper.
2. Cream butter, sugar, egg, and vanilla. Beat well.
3. Combine flour, baking powder, and salt. Add to creamed mixture.
4. Divide dough into thirds. To the first portion, add 5 drops of red food coloring and almond extract. Mix. Spread evenly into prepared loaf pan. Add pecans to second portion and spread over pink dough. Add melted chocolate to final portion and spread over dough in pan. Cover and chill for several hours.
5. Turn dough out of pan and remove wax paper. Cut dough in half lengthwise. Cute each half crosswise into 1/8″ thick slices. Place one inch apart on ungreased cookie sheets. Bade at 350F for 10-12 minutes. Makes 5 dozen.
