Shrimp and Red Pepper Pasta

Over a year ago, my husband and I challenged ourselves to make a new recipe each week. It didn't have to be overly complicated. We picked from one of our many cookbooks, from pinterest, or a new dish we heard about from others. Even though we don't always have the time to do that now, we added a lot of new dishes to our rotation. This was one of the dishes we found on pinterest and tried. The original recipe can be found here. We've adapted it to our taste.

1. You will need 2lbs raw, deveined shrimp, 1 red pepper, 3T. butter, 1 small onion, chopped, 6T. minced garlic, 1/2t. crushed red pepper, 1/2c. white wine, 1/2c. fat free evaporated milk, 1T. dry basil, 1c. parmesan cheese, and 12-16oz rotini pasta, cooked and drained.

2. Rinse shrimp and pat dry with a towel. Add butter to a skillet or wok. Add chopped red pepper, onion, and garlic. Cook over medium-high heat for a couple minutes until onion and peppers begin to soften. 

3. Add crushed red pepper and shrimp. Cook for another couple minutes.

4. Add wine. Bring to boil then reduce the heat to medium. Cook until shrimp are opaque. Pour evaporated milk in and boil. Reduce heat and let it boil for a minute while uncovered. Stir in dried basil (of course you can also use fresh, but I had dried basil on hand). 

5. Add parmesan cheese and cooked pasta to shrimp. You can serve immediately or cook a little while longer, until sauce has reduced to the consistency you like. 

Shrimp and Red Pepper Pasta
2lbs raw, deveined shrimp
3T. butter
1 red pepper, chopped
1 small onion, chopped 
6T. minced garlic
1/2t. crushed red pepper
1/2c. white wine
1/2c. fat free evaporated milk
1T. dry basil
1c. parmesan cheese
12-16oz rotini pasta, cooked and drained

1. Place butter in a large skillet or wok over medium high heat until melted. Meanwhile, rinse shrimp and pat dry with paper towel, set aside. Add onion, red pepper and garlic to skillet and cook a couple minutes until red pepper and onion begin to soften. 
2. Add shrimp and crushed red pepper to skillet. Cook for a couple minutes, while stirring. Add in wine.
3. Bring to boiling and reduce heat. Cook shrimp until they are opaque and stir in evaporated milk. Let boil again then reduce the heat. Let it boil for 1-2 minutes then stir in the crushed basil.
4. Add cooked pasta and parmesan cheese to shrimp. Enjoy!

  2. Looks amazing, i will have to give this a try! Its really fun to try new things :) i try to experiment as much as posible... Its so easy to get stuck to eating the same things over and over... Anyway, im hungry now haha
