This was a recipe given to my mom by one of her co-workers and quickly became a favorite at our house. The marinade is delicious and we typically boil it to spoon over the chicken for serving. It’s a versatile chicken; great for salads, sandwiches, or as a stand alone dish.
1. You need 4T. olive oil, 1/2c. honey, 1/8t. rosemary, 2T. Dijon mustard, 2T. minced garlic, 1/4c. lime juice, and 3 chicken breasts (halved).
2. You need to first make the marinade. In a large skillet (large enough to hold the chicken breasts), combine all the ingredients except the chicken. Heat over medium-high heat and mix well. Remove skillet from heat. Place chicken in warm marinade for a half an hour.
3. Prepare the grill. Remove chicken from marinade and cook 7-9 minutes (4-5 minutes per side) until cooked through. Baste with marinade while cooking. As I said before, you can boil the marinade (I’m paranoid and boil for about 5 minutes) to serve over cooked chicken. It’s easy to make extra and freeze in strips for salads.

Honey Spice Chicken Breasts
Ingredients:
4T. olive oil
1/2c. honey
1/8t. rosemary
2T. Dijon mustard
2T. minced garlic
1/4c. lime juice
3 chicken breasts (halved)
Directions:
1. Combine all ingredients except chicken in a large skillet over medium high heat. Mix well.
2. Remove skillet from heat and add chicken. Marinate for at least 30 minutes.
3. Grill chicken for 7-9 minutes (4-5 minutes on each side) basting and turning several times while grilling.
4. Boil marinade for several minutes to spoon over chicken if desired.
