This is a recipe passed down to me from my great grandma. It’s not secret or anything so I shouldn’t get disowned for sharing it with you (hopefully). It’s a tasty, rich chocolate cake that is made a little wacky. I love the buttery flavor of this and it tastes so much better than box cake (said the box cake addict). My mom and dad have fond memories of my great grandma making it when they would go visit and play cards.
1. Let’s get on to why the heck this is called Wacky Cake. You’ll need 1 1/2c. flour, 1c. sugar, 3T. cocoa, 1/2t. salt, 1t. soda, 1T. vinegar, 6T. melted butter, 1t. vanilla, and 1c. cold water.
2. Mix all the dry in an ungreased 8×8 or 9×9 inch square pan.
3. Make three depressions in the mixture. I would actually make 2 depressions small and one much larger.
4. Pour vinegar into one, vanilla into another, and butter into the third. The butter obviously overflowed into the other depressions because I didn’t have enough foresight to make one depression bigger, but it turned out just fine.
5. Pour the cold water over the top of all of it. Mix with a fork until well blended. You can also make this in a bowl, but you would need to grease your pan if you plan on doing that.
6. Bake at 350F for 40 minutes or until it begins to shrink from the pan.
7. I sprinkled powdered sugar over top.
Wacky Cake
Ingredients:
1 1/2c. flour
1c. sugar
3T. cocoa
1/2t. salt
1t. soda
1T. vinegar
6T. butter, melted
1t. vanilla
1c. cold water
Directions:
1. Preheat oven to 350F. Mix dry ingredients in ungreased 8 or 9 inch square pan.
2. Make 3 depressions in dry ingredient mix, 2 small and one large. Pour vinegar in one, vanilla in one, and butter in the large depression. Pour the cold water over top and mix with a fork until well blended.
3. Bake for 40 minutes or until it shrinks from the pan. Sprinkle powdered sugar over top if desired. Serve warm and store in an airtight container.
