I had these for the first time a few years ago at a bed and breakfast with my mom. The owner said she likes to make them for company because you can bake them all at once and don’t have to stand over the stove flipping pancakes. Good point. Of course then you would need more than a few cake pans. Either way, they are very tasty and bake into a fun bowl shape-perfect for toppings!
1. You need 3 eggs, 3/4c. milk, 3/4c. flour, 2t. sugar, and 1t. nutmeg or cinnamon, if desired. I also added 1t. of vanilla extract.
2. Preheat oven to 425F. and grease 1 round cake pan. Put all ingredients in a blender and mix until frothy.
3. Pour into greased cake pan. Bake for 16-18 minutes or until edges are golden brown. Serve with fruit and/or maple syrup.
Puff Pancakes
(makes 1 pancake)
Ingredients:
3 eggs
3/4c. milk
3/4c. flour
2t. sugar
1t. vanilla extract (if desired)
1t. nutmeg or cinnamon (if desired)
Directions:
1. Preheat oven to 425F. Grease 9 inch cake pan with cooking spray or butter.
2. Mix all ingredients in blender until frothy. Pour into pan.
3. Bake 16-18 minutes or until edges are golden brown. Serve topped with fruit and/or maple syrup.
